Quick Pumpkin Bread (Winner)
| Ingredients: | 2 c. flour |
| 1 c. Packed light brown sugar | |
| 1/2 c. nuts ( I use peanuts ) | |
| 1 1/2 tsp. Pumpkin pie spice | |
| 1 tsp. baking soda | |
| 1/2 tsp. baking powder | |
| 1/2 tsp. salt | |
| 1/3 c. butter | |
| 2 eggs | |
| 1 c. canned pumpkin |
Preheat oven to 350 deg. and grease 9X5 loaf pan.
Beat butter in large bowl until
creamy. Add eggs one at a time, beating after each
addition. Blend in pumpkin, add all other ingredients and stir until well mixed.
Pour
into prepared loaf pan.
Bake 50 to 55 minutes or until
inserted toothpick comes out clean. Cool in pan for 15 minutes
then remove from pan and cool completely on wire rack.
