Spanish-Style Green Beans
Makes 4 servings. 13g. carbs, 162 calories

| Ingredients: | 16 oz. green beans, trimmed & cut into 2" lengths |
| 3 tbsp. olive oil | |
| 1 onion chopped | |
| 1 small green pepper, chopped | |
| 1 tomato (4 oz.) peeled, seeded & chopped | |
| 2 cloves garlic, minced | |
| 1/8 tsp. ground black pepper | |
| 1/4 tsp. salt | |
| 2-3 tbsp. chopped, pitted Kalamata olives | |
Combine beans, oil, onion,
green peppers, tomato, garlic, salt and pepper
in saucepan over medium heat, cook, stirring until vegetables start to sizzle
for 2-3 min.
Reduce heat to low, cover and cook stirring occasionally until beans are tender
but not falling apart, 20 -25 minutes. Stir in olives and heat for 1 minute.
Serve warm, at room temperature or chill.
