Low-Carb Peanut Butter Cookies
Makes 24 cookies. 7g carbs, 94 calories per cookie
| Ingredients: | 6 tbsp. unsalted butter (soften) |
| 1/2 c. unsweetened creamy peanut butter, room temp. | |
| 1/4 c. packed brown sugar | |
| 1/4 c. splenda | |
| 1 lg. egg lightly beaten, room temp. | |
| 1 tsp. vanilla | |
| 1 1/4 c. sifted oat flour | |
| 1/4 tsp. baking powder | |
| 3 tbsp. salted peanuts, chopped | |
Preheat oven 350 deg. f. with
oven rack in the middle position.
In large bowl, beat butter and peanut butter until very sooth. Add brown sugar
and splenda, beat until
well combined and light in color (1 - 2 min.). Gradually beat in egg and
vanilla, beating smooth and a
little fluffy. Mix in flower and baking powder until a moist and cohesive dough
forms. Stir in peanuts.
Drop by tablespoon about 2"
apart on non-stick baking sheets. Using fork (dampened in cold water,
flatten
each in a cross-hatch pattern until 2" diameter. Bake until golden
brown.....22-25 min.
